You can find calabazas in any Asian supermarkets, latin market and some Walmart. If you can't find it, the best substitute will be butternut squash .

Ingredients
Olive oil, for drizzling, plus 1/4 cup 1 1/2 pounds calabaza, peeled and cut in large pieces Salt, freshly ground black pepper, 1 teaspoon of Turmeric, 1 teaspoon of Cumin 1 small white onion, large dice or half big onion 2 carrots dice 2 celery stalk, dice 4 cloves garlic, crushed 2 small bay leaves
2 culantro leaves or a small handful of cilantro 4 cups of chicken or vegetable stock For extra creaminess add 1/2 cup of coconut milk (optional)
Direction
1 in a medium or large size pot add some olive oil 2 Add the carrots, celery, garlic and onion. Sauté for 5 minutes or until you start smelling the garlic and onions. Then add the Calabaza and sautéed for another 5 minutes. 3 Add the broth and seasoned with salt, pepper, turmeric,, cumin, bay leaves, culantro, salt and pepper. Simmer about 20 minutes. Blend all the ingredients in your Vitamix until smooth you can add the Coconut milk and blend for a minute. Garnish with pumpkin seed and sourdough croutons.
