The Smile Arepa- The new series of food that shows my approach to The New American Cuisine

These arepa has become one of my kids favorite. I wonder why? most be the cheesy cornflour dough, or that the arepa is deep fried and then when you bite into it, the cheese melts in you mouth? For those who are not familiar with Arepa, I will explain a little bit. Arepas 🫓 are the national bread for Venezuela. We eat it for breakfast or dinner and you can stuffed with any fillings, like avocado and cheese "The Queen" Spanish Reina Pepiada, ham and cheese, shredded beef, so many options.

Arepas are gaining an international recognition an they're becoming super popular. In fact one year Arepa was called the best breakfast around the world. According to a poll published by the travel and adventure website, the Venezuelan arepa is in the top position in a list of 18 countries.

Todays recipe is what I called the New American Cuisine. The blend of a "Foreign traditional recipe" mixed with a very popular here in the USA Chicken Buffalo. That shows how versatile the Venezuelan Corn Flour can be not to mention that is GF.



Ingredients for the Cheddar Cheese Arepas

2 cups of H.A.P Flour

2 1/2 cups of warm water

1 cup of cheddar cheese

1 teaspoon of salt

Directions

  1. in a large bowl combine all Ingredients except the cheese and knead until it forms a uniform dough then add the cheese and knead for another minute. Make sure there is no lumps in the dough. Cover with a kitchen towel and let it sit for 5 minutes.

  2. Using your hand divide the dough in 6 to 8 ball and flat gently using the palm of both of your hand to create an arepas about 1 inch think, then poke a whole in the center of the arepa. This is what makes the fried arepa so unique.

  3. In one 12 inch add 1 cup of avocado oil or any oil of your choice. Once the oil in hot fried the arepas for about 8 minutes on each side or until golden brown.

Filling

2 cups of shredded chicken breast ( I used a rotisserie chicken)

1 cup of cheddar cheese

1/2 cup of scallions

1/3 cup of buffalo sauce

2 tablespoon spoon of sour cream

Directions

In a medium size bowl combine all ingredients and seasoned to taste.

Split the arepa only half way like a pocket, then filled with the Buffalo Chicken and enjoy !
